Had a nice evening with [livejournal.com profile] auriaephialia, [livejournal.com profile] iclysdale, [livejournal.com profile] commodorified, [livejournal.com profile] raynedaze and a friend of hers. The 'crock pot cabbage rolls casserole' was a hit, which is great, because it's easier to make than real cabbage rolls. Well, slightly.

We watched episode 3 of Law and Order UK and agreed that the plot wasn't as good as the previous two; we thought the husband should have been guilty. Then we watched the first episode of Leverage and all of us liked it a lot. Ahh, so much delightful stuff to watch - ! I think I've seen more different TV shows in the past week than in the whole decade.

The crock pot cabbage rolls casserole also has the advantage that you don't have to try to cut the slippery bits of cabbage roll wrapper as they slide around on your plate. It was good.

The bioregional/100-mile diet pork chops that [livejournal.com profile] commodorified brought were also yummy.

EASY CABBAGE ROLL RECIPE

While everyone enjoys the great taste of cabbage rolls, they're a lot of work to make. This recipe is an easy alternative with the same great taste. Menu suggestion: serve with mashed potatoes and peas, sliced peaches and yogurt.

Lightly grease the slow cooker stoneware insert.

1 1/2 lbs lean ground beef or turkey (750 g)
2 medium onions, finely chopped (2)
1 clove garlic, minced (1)
1 tsp salt (5 mL)
1/4 tsp black pepper (1 mL)
1 small can (7.5 oz [221 mL]) tomato sauce
1 cup water (250 mL)
1 can (10 oz [284 mL]) condensed tomato soup (1)
1/2 cup long grain rice (125 mL)
4 cups shredded cabbage (1 L)
sour cream

1. In a large nonstick skillet over medium-high heat, combine ground beef, onions, garlic, salt and pepper; cook, breaking up meat with a spon, until browned. Drain off any excess fat. Return to heat and add tomato sauce, water, and half the can of tomato soup, mixing well. Add rice, stirring to combine.

2. Into prepared slow cooker, place half of meat mixture, then half of cabbage. Top with remaining meat mixture and remaining cabbage.

3. In a bowl combine remaining tomato soup with tomato juice, mixing well. Pour into slow cooker. Cover and cook on Low for 8 to 10 hours or on High for 4 to 6 hours, until bubbling and heated through. Serve with sour cream.

I was worried about putting the rice into the recipe uncooked, but it came out fine. I cooked it on low for 8 hours.
