This is from my experience with gallstones, and what my doctor told me, about 15 years ago.
To the best of my knowledge there are two treatments. One is a low-fat diet, the other is surgery. The diet postpones the surgery. The big downside to trying to treat it purely with diet is that it practically always leads to an emergency gall bladder removal.

I'd get the surgery at your earliest convenience.
