Rice Pudding...

I promised rosiespark that I'd post this recipe, an old favourite for baked rice pudding that is incredibly simple and delicious.

Rice Pudding

2 cups cooked rice
2 eggs, lightly beaten
2 cups milk
6 tsp honey or 1/3 cup maple syrup or ½ cup sugar or 1/2 cup stevia
½ tsp cinnamon
½ tsp nutmeg
½ tsp vanilla
1 tsp grated orange or lemon rind - optional

Combine all ingredients in a greased 9" baking dish, and bake at 350F or 177C for 30 minutes or until nicely browned.
