Skin

Jack liked touching skin, and tasting it. Everyone tasted different, with unique texture and sheen.

Gwen's skin was a landscape of freckles, random in pattern. Toshiko's was smooth, pale from her life spent indoors, holding a hint of golden underglow. Owen was white, English white. His skin made no apologies for its whiteness, dramatically offset by his dark hair.

Ianto had sensitive skin, sensuous skin that liked to be stroked and kissed and pressed by exploring hands. It was responsive skin, that reddened to a blush with embarrassment or arousal. Enticing skin, delicious skin.

Skin so easy to love.

Oh of course Jack loves it. Especially since Jack probably hasn't blushed since he was fourteen.

Ianto so aloof and unknowable, yet so easily betrayed by his blushes.

Here's a point to ponder. (I just now thought of this.) Two of the biggest sensualists I know hate being casually touched. I wonder if it's to do with that sensitivity you speak of. Ianto hates being casually touched: therefore, Ianto is a big ol' sensualist. ;-)

I'd say only the Doctor knows for sure.

Ianto so aloof and unknowable, yet so easily betrayed by his blushes.

He has a lot of external serlf-control, but it's only (if I may use the phrase) skin deep.

That was more or less my reasoning. Ianto like to keep his self-control, and therefore avoids situations which make him vulnerable - unless he feels very safe with someone. He felt safe with Lisa, and now he feels safe with Jack. Not necessarily secure - he fears Jack might leave him again - but safe.
